it is processed and cooled quickly to avoid maceration. Clarification is carried out via flotation with plant proteins. Fermentation takes place at low temperatures using yeasts specialised in the release of aromatic precursors contained in the grape must. After fermentation, the wine is carefully racked to separate it from coarse lees and is sulphited to avoid any risk of oxidation.
Acaballo is a soft yellow colour with greenish reflections, this wine shows a lively and bright colour. Complex nose with notes of tropical fruits, citrus and light grassy notes.
The palate has a balanced acidity with the alcohol level.
